Initiated by Dr. -Ing. Karl Busch and his wife Ayhan Busch, they set up their company named Dr. -Ing. K. Busch GmbH Company in 1963 in Germany which produced the first vacuum pump. This pump was a 'Hukepack' pump that could ideally be used in the food industry, and since then many have adopted his technology.
Vacuum packaging is a way of sealing food in an air-tight container, where the air is extracted after putting the product inside (typically a thick plastic bag). This method prevents microbes from the air from spoiling the food, shortening it's shelf life and increasing unwanted food costs to an establishment.
This useful machine falls under the category of Technology in Innovation because it is a piece of equipment invented to serve a purpose. It is extremely important and useful in kitchens today because it preserves food much longer and gives everything from cheese to lamb shanks a longer shelf life. It keeps food safer from bacteria and reduces food costs as food waste is minimal (when used properly).
The vac pack machine has affected me in a small but effective way, as we use it constantly at my current kitchen job. I understand the practice of safe food handling and the vacuum packing machine helps me to appreciate the fact that the industry is concerned about the food they are serving the public.
